• Panko Parmesan Salmon with Broccoli (2 servings) •

You need:

• 400g of salmon filet (with skin)
• 1 cup of Panko
• 1 cup of Parmesan (ground)
• 1 egg
• 1 broccoli
• olive oil
• salt & pepper

Pre-heat your oven to 200°C.

Wash the salmon and dab it dry. Mix the Panko with the Parmesan. Stir the egg, now first dredge the salmon in it, afterwards in the Panko-and-Parmesan mixture and put it on your baking tray (don’t forget the baking parchment!).
Wash the broccoli and place it around the salmon. Season it all with olive oil, salt and pepper. Put it into the oven for 20 minutes.

• Salmon with basil butter and Parmesan and veggies (2 servings) •

You need:

• 400g of salmon filet (with skin)
• 1 butter
• 1 pot of basil
• 1-2 garlic cloves
• 1 cup of Parmesan (ground)
• olive oil
• salt & pepper
• veggies (e.g. broccoli, carrots, zucchini,…)

Pre-heat your oven to 200°C.

Basil butter: slightly heat the butter in your microwave (don’t melt it, just make it soft!). Wash the basil leaves (as many as you want, I actually like to use the whole pot!) and cut it as tiny as you can. Add it to the butter. Smash the garlic with a garlic press and add it to the butter. Now add salt and pepper and mix it all very well. For the “Salmon Quickie”, leave about two table spoons in a small bowl. You can now put the rest into a Tupperware bowl and into your fridge (you should consume it within a week). The basil butter tastes amazing with freshly toasted bread, is also great to fry anything (potatoes!) and a great companion for steak. Just a few ideas. ;)

Add the Parmesan to the basil butter in the bowl and mix it well. Wash the salmon and dab it dry, put it on your baking tray (don’t forget the baking parchment!) and cover it with the butter mixture.
Wash the veggies and place them around the salmon. Now season the veggies with olive oil, salt and pepper. Put it all into the oven for 20 minutes.

It’s getting cold outside – and cozy inside! Time for a hot cup of tea/coffee/chocolate/milk (everything’s a good choice, right?) and something sweet to indulge yourself with while watching your favorite DVDs – time for a cookie! Done in a total of about 20 minutes and perfect just for yourself (but don’t forget: sharing is caring – but you can also double the ingredients and create a pizza-sized huge cookie for two). I transformed a recipe from → Cooking Classy, actually for one big chocolate chip cookie – my version makes a big cookie filled with nutella, crunchy on the edge, soft in the middle. And if you love nutella, you can put a small cup with it into the still hot oven, melt it a bit and drip it over your cookie. ;) Well, I’m fat AND a diabetic (type 1, though – so no judging here!) – but we’re all allowed to enjoy some little sins from time to time, and what’s winter and holiday season without some cookie fun? ;) So here goes my recipe for a delicious single nutella cookie. It’s time for a new recipe on the blog – today, I’ve got something very easy and delicious for you. A perfect match for any fresh bread or a BBQ. Easily done in a few quick steps!

You’ll need:

• medium-sized tomatoes
• fresh garlic
• fresh thyme
• freshly ground sea salt and pepper
• high-quality olive oil

Just use as much as you’d like to have (depending on whether the tomatoes will be a side dish or part of your main course).
Cut the tomatoes in halves and remove the pips. Put them in a heat-resistant bowl that can be put into your oven. Pre-heat the oven to about 200 °C/392 °F.

Then slice the garlic as thin as possible and use about two slices for every tomato half. Wash the thyme and scatter the tiny leaves on the tomatoes. Pour a small amount of olive oil into the tomato halves and season with freshly ground sea salt and pepper. You could also add some chili if you like it a little more spicy. ;)

Put it all into the oven for about 30 minutes – the tomatoes should be a little squishy now.
We had them the other day with some chicken fillets, which is also a great combination and absolutely delicious. :)
