• Panko Parmesan Salmon with Broccoli (2 servings) •

You need:

• 400g of salmon filet (with skin)
• 1 cup of Panko
• 1 cup of Parmesan (ground)
• 1 egg
• 1 broccoli
• olive oil
• salt & pepper

Pre-heat your oven to 200°C.

Wash the salmon and dab it dry. Mix the Panko with the Parmesan. Stir the egg, now first dredge the salmon in it, afterwards in the Panko-and-Parmesan mixture and put it on your baking tray (don’t forget the baking parchment!).
Wash the broccoli and place it around the salmon. Season it all with olive oil, salt and pepper. Put it into the oven for 20 minutes.

• Salmon with basil butter and Parmesan and veggies (2 servings) •

You need:

• 400g of salmon filet (with skin)
• 1 butter
• 1 pot of basil
• 1-2 garlic cloves
• 1 cup of Parmesan (ground)
• olive oil
• salt & pepper
• veggies (e.g. broccoli, carrots, zucchini,…)

Pre-heat your oven to 200°C.

Basil butter: slightly heat the butter in your microwave (don’t melt it, just make it soft!). Wash the basil leaves (as many as you want, I actually like to use the whole pot!) and cut it as tiny as you can. Add it to the butter. Smash the garlic with a garlic press and add it to the butter. Now add salt and pepper and mix it all very well. For the “Salmon Quickie”, leave about two table spoons in a small bowl. You can now put the rest into a Tupperware bowl and into your fridge (you should consume it within a week). The basil butter tastes amazing with freshly toasted bread, is also great to fry anything (potatoes!) and a great companion for steak. Just a few ideas. ;)

Add the Parmesan to the basil butter in the bowl and mix it well. Wash the salmon and dab it dry, put it on your baking tray (don’t forget the baking parchment!) and cover it with the butter mixture.
Wash the veggies and place them around the salmon. Now season the veggies with olive oil, salt and pepper. Put it all into the oven for 20 minutes.

  • Also die Lachs Quickies sehen so gut aus das ich sie später gleich mal ausprobieren muss, austesten ist vielleicht besser gesagt.
    Backen ist auch besser da gesünder. Und so viele Kalorien hat es auch nicht, wohl durch das backen. Danke für das Rezept.

    • Ok, ich musste erstmal Google fragen, was Panko ist … – man lernt nie aus.
      Sieht unglaublich lecker aus und im Herbst habe ich immer richtig Lust auf alles, was aus dem Ofen kommt.

        • Haha, ja, ab und zu ist mal was Neues dabei! :) Hier hab’ ich übrigens den gröberen Panko verwendet, es gibt auch eine feinere Version, die vielleicht auch etwas besser funktioniert.
          Ich bin auch ein großer Fan von Ofengerichten (nur mit Aufläufen konnte man mich irgendwie noch nie so richtig rumkriegen, haha!). Gerade Lachs wird im Ofen ja immer so herrlich saftig – ich liebe es!!

          Durch das Panko wird der Lachs oben recht gut knusprig, oder ?
